Pasta with tuna sauce

Donít be frightened of pasta! Itís easy, as well as being nourishing and delicious. Itís an inexpensive hot meal for the family in minutes. These quantities are enough for two-three large helpings. Double up for the family.

  • For the pasta:
  • For every 100g (4oz) of dry pasta use 800ml (1Ĺ pints) of water
  • A little oil
  • For the sauce:
  • 2 small (185g) cans of flaked tuna
  • A small onion
  • A red pepper
  • 2 tablespoonsful butter
  • 250g (8oz) sour cream
  • Salt and pepper

For the pasta: Boil 800ml (1Ĺ pints) of water. Add a teaspoonful of salt. Add the pasta (slowly if itís spaghetti) to the boiling water. Cook it until itís soft but not squishy, and drain. Stir in a tablespoonful of oil to stop it sticking.

For the sauce: Chop the onion and the red pepper. Drain the tuna. Heat the butter in a saucepan, add the onion and cook until itís clear. Add the tuna and the sour cream. Heat but donít allow to boil. Stir in the red pepper. Season to taste. Serve over the hot pasta. Delicious!
