Chilli mince bake

My old friend Kevin gave me this recipe for a tasty winter supper. It’s by no means set in stone—add, leave out, alter as you choose! Apart from an oven-proof dish, you will need:

  • 450g/1lb mince
  • An onion
  • A tin of tomatoes
  • An egg
  • 115g/4oz mushrooms
  • 2 packs of low-fat cottage cheese
  • A slurp of tomato sauce
  • A squeeze of tomato purée
  • A splash of Worcestershire sauce
  • 1 teaspoonful chilli powder
  • ½ teaspoonful garlic salt
  • Oil

Chop the onion and slice the mushrooms.

Break the egg into a bowl, add the cottage cheese and mix well together.

Cook the mushrooms in a splash of oil, and put them on one side. Fry the onion till translucent. Add the mince. Stir and cook until the meat is brown. Drain off any excess fat. Add the rest of the ingredients—more or less of the spices as you wish, of course. Simmer the mix for a few minutes so that the spices cook and release their flavour.

Put the mix in an ovenproof dish, and layer the mushrooms over the mix. Top the lot with the cheese and egg mixture, level off, and put the dish under the grill until the top is light brown.
