Delicious biscuits

A simple recipe for plain, delicious, vanilla-flavoured biscuits. It's easy to adapt - into chocolate biscuits, for example.

  • 115g (4oz) butter
  • An egg
  • cup sugar
  • 2 cups plain flour
  • A teaspoonful vanilla essence
  • A teaspoonful baking powder

Turn on the oven to heat to 190C/375F. Warm the butter to soften it. Cream the butter with the sugar and the vanilla essence till its light and fluffy. Beat in the egg. Mix in the flour and the baking powder.

Roll heaped teaspoonsful of the mixture into balls and place on an oven tray. Flatten each ball with a floured fork (so it doesnt stick).

Bake for 12 minutes or until pale golden.

Chocolate biscuits:

Add 2 tablespoonsful of cocoa to the flour

Orange biscuits (yummy):

Omit the vanilla essence. Add a tablespoonful of grated orange rind.

Sultana biscuits:

Fold a handful of sultanas into the mixture.
